Polyglycerol esters of fatty acids (E 475) are dispersable in water and soluble in oil. This functionality is utilised to good effect in Palsgaard’s EMULPALS range of bakery emulsifiers which are cold dispersable and create a consistent, stable batter for cakes and sponges prior to baking.
