Propylene Glycol Monostearate (PGMS) (477) is a type of fatty acid emulsifier. It is normally added to baked goods to improve cake batter performance, crumb structure and cake volume. PGMS is also used in margarine to improve whipping properties and plasticity and reduce spattering. It also finds application in topping powders where it increases overrun and foam stiffness and decreases whipping time.
