Flavours > How do you select the correct flavour?


There are a number of considerations to make before choosing a flavour for a new product.


Here are some frequently asked questions, with comments from the HWL team:

Question Comments
Are there any special religious requirements such as Halal or Kosher certification Halal certified flavours in particular are now increasingly important. Halal certified flavours cannot contain ethanol, which may limit the selection of flavour raw materials.

Does the flavour need to be:

  • Natural?
  • Nature Identical?
  • Artificial?
Manufacturers wishing to make “all natural”or “no artificial ingredients”claims need to consider these requirements
What makes a flavour Natural, Nature Identical or Artificial
Are there any ingredients not permitted, such as known allergens, HVP, MSG etc Refer to the FSANZ website for details on allergens
Does the flavour need to be oil- soluble or water-soluble? Important especially for products involving emulsions.
Should the flavour be in a liquid or powder form? For example, is the product a powder blend?
Are there any special processing conditions? For example, is the product exposed to high temperature or low pH
What are the dose rate and cost restrictions? Are there limitations to how much flavour can be added? Is there a dosage/price point?
Is the flavour added as a top note or as a complete flavour?
