Polyglycerol esters of fatty acids
(E 475) are dispersable in water and soluble in oil. This functionality is utilised to good effect in Palsgaard’s EMULPALS range of bakery emulsifiers which are cold dispersable and create a consistent, stable batter for cakes and sponges prior to baking.
PGPR, Polyglycerol Polyricinoleate (E476), is widely used by the chocolate and confectionery industry.
Palsgaard® 4150 is a new generation of PGPR, which combines high functionality with a flavour-neutral character, improves moulding and reduces the yield value of chocolate. Palsgaard® 4150 is a highly concentrated PGPR which can be added at a lower dosage than standard PGPR, giving optimal flow properties of the chocolate mass.
