Prolite 100 Binder
Prolite
100 wheat protein isolate is
designed to mimic the properties of sugar
as a binder for reduced sugar applications
such as baked goods, cereals, clusters,
bars, and various processed foods. It
also improves freeze-thaw performance
in frozen-to-oven applications while
delivering fresh taste and texture. Prolite
100 wheat protein isolate can replace
or reduce egg or dairy proteins in a
variety of baked or processed foods.
Prolite 100 wheat protein isolate will form a foam when whipped with
water. This functionality also makes it remarkably unique for applications
requiring specific texture and mouth feel, such as desserts, sauces,
fillings, and cakes.

More expertise on GUM
ACACIA at Hawkins Watts
In June 2009, Anabelle Boret, from our Quality and
Technical Service Team, spent 2 days in France at CNI, learning more
about gum acacia and its applications.
 Anabelle
was trained by Jean-Claude Prou, Product Development Manager
at CNI, who has over 20 years experience in confectionery.
She had the opportunity to learn more about the subtle techniques
of pan-coating and moulding candies through hands-on training
in the pilot plant.
Anabelle made up pan-coated roasted almonds with Coating Gum, sugar
free moulded candies with Instant Gum and sugar-free cereal bars using
Fibregum.
