Flavoured waters

Flavoured waters or "near waters" are natural extensions of the bottled water market, and we expect to see continuing product launches in this area.

Ingredient Functionality Ingredient and Benefits
Acidulants
The addition of a small amount of acid with sweeteners can enhance the flavour perception of flavoured waters. ADM Citric Acid is a natural acidulant that gives a pleasant acid note.

ATP Tartaric Acid
is a natural acidulant, but with a slightly more acidic profile than citric acid.

Antioxidants
  Antioxidants such as ascorbic acid can be added to ensure good stability.
Colours
  HWL offers a comprehensive range of natural and artificial colours for use in all food and beverage applications.

Flavours
Whether still or sparkling, Symrise has a great range of flavours to add a sophisticated edge to water.
Gums and hydrocolloids
  ADM's Xanthan Gum is often used to provide viscosity in flavoured waters due to the low dosages needed.  It is also very stable to acid, temperature and enzymes.  ADM has high clarity versions specifically designed for this application.

Herbstreith and Fox Instant CJ204
is an agglomerated pectin which provides extra mouthfeel and improved flavour release to beverages.
Minerals
Many manufacturers choose to add additional minerals to flavoured milks. Typically these include calcium in a number of formats, but other minerals can also be added.

Jost Chemicals has developed unique new technology for manufacturing ultra-pure calcium salts with very low levels of aluminium, lead, manganese, iron and other vagrant metals.  Jost also has a comprehensive range of purity salts including ascorbates, carbonates, citrates, fumarates, gluconates, lactates, malates, nitrates, phosphates, succinates and sulphates.

Sweeteners
HWL offer a range of sweeteners including ADM Cornsweet Fructose, which can be added at low concentrations to give a mild sweet profile. ADM Cornsweet Fructose is a crystalline sweetener with 1.2 - 1.6 times the sweetness of sucrose. ADM Cornsweet Fructose also has a low glycaemic index and is suitable for use at very low dose rates, especially in combination with high intensity sweeteners such as sucralose.
