Generally, the higher the degree of alkalisation
of the cocoa powder, the more dispersible it becomes. However
to enhance dispersion in water or milk, lecithinated

from apples. Herbasweet is a low GI sweetener, and both
have high
content of antioxidant polyphenols. |

Cornsweet
Fructose from ADM is a crystalline sweetener
with 1.2 – 1.6 times the sweetness of sucrose. ADM
Cornsweet Fructose will often enhance the
flavour of cocoa-based products and dissolves quickly
to give a perception of high sweetness without contributing
as many calories as normal sucrose.

dry honey powder is available with 50 and
70% honey content. Due to the heating involved, this
product is able to be imported into NZ under a MAF

colour and flavour to baked goods. |

Stevia from Daepyung is
a natural high-intensity sweetener and sugar substitute
extracted from the Stevia plant with applications
in low-sugar

SymLife® Sweet from Symrise is
a flavouring which enhances sweetness, while allowing
sucrose levels to be reduced
by as much as 30%. SymLife® Sweet works well in combination
